Hi Robert,
I have not come across any studies that specifically relate to feeding sprouts. However, sprouts are a very nutritious food and I expect horses would love them. Alfalfa sprouts are the baby plant at their most nutritious stage -- high in vitamins, minerals, protein, and valuable enzymes. They have my vote!
