A good idea for you might be a "slush" fund, which is an alloted amount monthly to spend on the "extras" like a cup of coffee etc.
The key to happiness will be budgeting both the savings goals, the loan payments, and enough to keep your husband from feeling like he can't enjoy life anymore.
Other thought...make some coffee at home.
